Meal Prep Friendly

Macro Adjustments Made Easy

Protein: Using ABV Protein Pancake Mix ensures that the muffins are packed with protein. You can always add a bit more protein powder to increase the protein content. But be careful, as any alterations can significantly affect the final results.

Carbs: We do not recommend changing the carb content as it would affect the consistency of the muffins.

Fats: Looking to increase the fat intake? Consider adding two tablespoons of butter for a flavour punch.

The Recipe: Blueberry Protein Muffins with ABV Protein Pancake Mix

  • 1 cup ABV Protein Pancake Mix
  • 1 cup fresh or frozen blueberries
  • 1-2 scoops vanilla or unflavored protein powder (optional, based on your protein needs)
  • 1 cup water or milk (for a more decadent muffin, milk is recommended)
  • Two tablespoons melted butter or oil (optional, for those looking to up the fat content)
  • Two eggs (to add structure and richness)
  • One teaspoon of vanilla extract (for that comforting, classic flavour)

  1. Preheat & prepare: Preheat Oven to 350°F (175°C) and line a muffin tin with paper liners or grease it to prevent sticking.
  2. Mix all the wet ingredients in a large bowl. Whisk together the eggs, water (or milk), melted butter (or oil) and vanilla extract until well mixed.
  3. Gently add all the dry ingredients: Slowly add ABV Protein Pancake Mix and additional protein powder (if using) to the wet ingredients. Be careful not to overmix. Some lumps are okay.
  4. Evenly distribute your blueberries to the mix.
  5. Bake to perfection: Once preheated, spoon the batter into the prepared muffin tins and fill each muffin tin about 2/3 of the way. Bake for 20-25 minutes or until a toothpick inserted into the center comes clean.
  6. Cool for 10-15 minutes or until completely cooled.
  7. Bonnappetit!
