Chocolate Chip Cookies Recipe Using Protein Pancake Mix

  • 1 cup ABV Protein Pancake mix (You can choose to swap this with your preferred protein pancake mix if ABV isn't on hand.)
  • 1/4 cup softened butter (Ensure it's at room temperature for easy mixing.)
  • 1/4 cup sugar (Feel free substitute with coconut sugar or a sweetener of your choice for a healthier option.)
  • 1 egg (Room temperature eggs mix into batter more evenly.)
  • 1 tsp vanilla extract (For that irresistible fragrance and flavour.)
  • 1/2 cup chocolate chips (Feel free to adjust, or even substitute with nuts or dried fruit for variety.)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Mix in a large bowl the 1/4 cup softened butter and 1/4 cup sugar until it is light and fluffy.
  3. Add in the 1 egg and 1 tsp of vanilla extract to your butter and sugar mixture, beating until everything is well combined.
  4. Gradually mix in the 1 cup of ABV Protein Pancake mix to the wet ingredients until just combined. Do not overmix.
  5. Fold in the 1/2 cup of chocolate chips, distributing them evenly throughout the batter.
  6. Drop spoonfuls of the cookie dough onto your prepared baking sheet. Remember to leave enough space between each cookie as they will spread during baking.
